Pepette style salad (thank you Régine)
Thanks to my friend Pepette for the idea .....
Ingredient for 3 or 4: 1 leftover rice, 1 red onion, 1/2 yellow pepper , 1/2 green pepper, 3 or 4 tomatoes, 1 handful of pitted black olives, 1 avocado. Slices all the ingredients and mix them with rice. Make a vinaigrette dressing with basil mustard wine vinegar and sunflower oil. Mix, chill until ready to serve. Delicious .. For one night it's nikel.
